Any Costa Ricans have any good recipes for cooking with "Yucca" Costa Rican style?

Enucados (sp)





peel yucca and cut into approx 3 inch pieces and boil in salted water til soft.. Remove center strings, then mash the yucca.


cook ground beef with diced onion and garlic. Drain and allow to cool.Heat frying oil. and have ready a bowl of egg milk wash %26amp; another of cornmeal for breading.


take some yucca in your hand and form into a rectangle place some of the meat mixture on top and seal up with more yucca if necessary. When this is all done, put in egg wash then cornmeal and deep fry till golden brown.





good stuff.
